1 cup split orange lentils

2 tbsp canola oil (or other oil with a high smoke point)

½ tsp cumin seeds

1 cup red onion, diced small

5 x cloves garlic, crushed

1 tsp ground coriander seeds

¾ tsp ground tumeric

¼ tsp cayenne (more if you prefer it spicier)

1 tbsp tomato paste

1 tbsp lemon juice

1 tsp salt (more to taste)

chopped cilantro leaves (optional)
