Ingredients

grits:

3/4 cup old-fashioned grits

4 cups cold water

1/2 teaspoon salt

1 can (11 ounces) low-sodium corn kernels, drained

2 tablespoons sliced scallion greens

CREOLE SHRIMP AND green beanS:

1 pound fresh green beans, trimmed and cut into 1" pieces (4 cups)

2 tablespoons olive oil

1 medium leek, halved, sliced 1/2" thick, well rinsed of sand

1 medium stalk celery, thinly sliced

2 large cloves garlic, thinly sliced

1 teaspoon dried thyme

1/4 teaspoon ground red pepper

2 cans (14 ounces each) diced no-saltadded tomatoes in juice

1 pound peeled and deveined medium or large shrimp, tails left on, thawed if frozen, rinsed and drained
