1 1/2 cups gluten-free flour – I like Pamela’s baking mix

1 teaspoon baking soda

1/2 teaspoon baking powder – [not required for non gluten-free]

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground ginger

1 teaspoon salt

1 cup pumpkin puree [I used canned pumpkin]

1/2 cup olive oil or vegetable oil

1 cup sugar

2 large eggs

1/2 teaspoon vanilla extract

1/2 cup pistachios, chopped + 1/4 cup for sprinkling
