1 cup of cottage cheese (a 230g tub)

Salt and pepper

Olive oil

Kernels from two cobs of fresh sweetcorn

3 courgette (zucchini), cut into small cubes

3 spring onions, finely sliced

1 green chilli, finely chopped

1 tsp cumin

1 Tbsp olive oil

Small bunch fresh coriander, roughly chopped
