1 tbsp Honey

2 tbsp Olive Oil

1/2 tsp Lemon Juice

1/4 tsp Salt

Freshly ground black pepper

1 x egg

4 oz each, about 1 inch thick, skin removed if desired

3 tbsp olive oil, divided

2 tbsp Sweet Mustard Sauce, - see above

Salt and freshly ground black pepper

1 x tomato cut into four 1/2 -inch slices

1/4 x red onion, sliced thinly

8 x dark rye or multi-grain bread, slices

Mixed leafy greens

1 x avocado halved, pitted, and cut into 1/2 inch slices

2 tsp capers, drained
