  • 2 Tbsps walnut pieces, toasted (see Tip)
  • 3 Tbsps reduced-sodium chicken broth, or vegetable broth
  • 1/4 tsp freshly ground pepper
  • 3 Tbsps torn fresh sage leaves
  • 3 acorn squash, (1-1 1/4 lbs each)
  • 1 tsp extra-virgin olive oil
  • 2 Tbsps extra-virgin olive oil
  • 1 cup fresh parsley leaves
  • 1 clove garlic, peeled
  • Salt & freshly ground pepper to taste
  • Pesto
  • 1/4 tsp salt
