1 fresh beef tongue, 3 to 3 1/2 pounds

2 celery ribs, chopped

2 carrots, chopped

1 onion, halved and stuck with 2 cloves

1 bay leaf

12 black peppercorns

4 parsley sprigs

Anchovy Vinaigrette

2 tablespoons white wine vinegar

1 large shallot, finely minced

1 large garlic clove, finely minced

4 anchovy fillets, finely minced

2 tablespoons minced parsley

1 tablespoon minced fresh tarragon

2 teaspoons capers, chopped

3/4 cup extra virgin olive oil

Salt to taste

3 hard-cooked eggs, chopped
