2 onions, peeled and sliced lengthwise

1 red bell pepper, seeded, sliced

1 green bell pepper, seeded, sliced

1 eggplant, thinly sliced, then cut into strips

6 tablespoons olive oil

5 to 8 garlic cloves, chopped

2 teaspoons or more chopped fresh herbs: marjoram, thyme, rosemary, savory

Salt and freshly ground pepper

Pinch sugar

2 pounds young, tender zucchini, cut into thin slices

2 pounds vine-ripened tomatoes, sliced

1/2 cup grated Parmesan, or other grating cheese (Asiago, Locatelli Romano, pecorino), or breadcrumbs if the dish is to be eaten cool
