6 dried shiitake mushrooms

1 large bunch fresh spinach, stems removed

2 large eggs

Salt and pepper to taste

2 teaspoons hot sesame oil

1 cup finely diced firm tofu

6 green onions, white and green parts, finely chopped

1 tablespoon minced garlic

1 tablespoon minced ginger

1 tablespoon tamari or soy sauce

About 32 round dumpling wrappers

Peanut oil if frying
