Ingredients for 8 servings

2 pounds brisket, ground twice

Kosher salt and freshly ground black pepper

extra-virgin olive oil

8 hamburger buns, split

8 thin slices Swiss cheese

16 slices of bacon

2 heirloom tomatoes, sliced

cilantro sprigs for garnish

6 poblano chiles (OR 10 anaheim chiles)

1 large white onion, sliced

1 cup of sour cream

1 cup of mayonnaise

Juice of 2 limes (limes grilled)

1 teaspoon of sugar

Preparation

1.

Preheat an outdoor gas or charcoal barbecue to medium hot

2.

Take a few paper towels and fold them several times to make a thick square

3.

Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a non-stick surface.
