Maldon sea salt

500 g Jerusalem Artichokes, peeled and sliced

1/2 of roasted garlic bulb, soft pulp only

1 banana shallot, sliced

1 tbs unsalted butter

50 ml Brandy, Madeira or white wine

Salt and freshly cracked black pepper

1 L vegetable stock
