  • 1 bulb of garlic
  • 1 tbs light brown sugar
  • 1 tbs water
  • Maldon sea salt
  • 500 g Jerusalem Artichokes, peeled and sliced
  • 1/2 of roasted garlic bulb, soft pulp only
  • 1 banana shallot, sliced
  • 1 tbs unsalted butter
  • 50 ml Brandy, Madeira or white wine
  • Salt and freshly cracked black pepper
  • 1 L vegetable stock
