3 large carrots, peeled and sliced into matchsticks

¼ large red cabbage, julienned

1 (15-oz.) can baby corn, drained, rinsed, and corn sliced lengthwise into quarters

1 cup thinly sliced rounds of radish

½ cup roughly chopped or halved peanuts

1 ½ tablespoons roughly chopped fresh lemongrass

1 tablespoon roughly chopped fresh peeled gingerroot

3 tablespoons rice vinegar

2 tablespoons low-sodium soy sauce

1 teaspoon canola oil

1 teaspoon roughly chopped garlic

Dash sea salt
