1 cup red wine vinegar

1 large rosemary branch, about 4-6 inches long

1/2 teaspoon whole black peppercorns

2 large cloves garlic, peeled and crushed

2 sprigs thyme

2 pounds sirloin steak, tri-tip or other meat

Kosher salt to taste

Freshly ground black pepper

Optional Sauce

2 teaspoons olive oil

1/2 cup chopped yellow onion (optional)

1/2 cup veal demi-glace (optional)
