1/2 cup (minus 1 Tbsp) whole milk

2 tbsp olive oil

2 x scallions, chopped

1 tbsp chives, chopped

1 tbsp tarragon, chopped

Sea salt

7 oz mâche (lamb’s lettuce)

2 oz caramelized pecans

2 oz goat cheese, diced

Vinaigrette (1.5 Tbsp sherry vinegar plus 3 Tbsp walnut oil plus 1 shallot, finely chopped plus 1 Tbsp chopped chives plus salt and pepper)

5.5 oz red and green grapes

1/2 x green apple, Granny Smith

Juice of 1/2 lemon

1 small black radish (7 oz), finely grated
