1 tsp. soy sauce or tamari

1 cup fine dried bread crumbs

Vegetable oil for frying

3 Tbs. olive oil

1 1/2 Tbs. fresh orange juice

1 Tbs. balsamic vinegar

1 tsp. honey or maple syrup

1 tsp. Dijon mustard

1/2 tsp. finely grated orange peel

6 cups torn romaine lettuce leaves, rinsed and dried

6 cups torn tender escarole hearts or curly endive, rinsed and dried

Toasted pecans and chopped fresh basil for garnish (optional)
