  • 1 medium eggplant (about 1 1/4 lbs), cut into 1-inch pieces (about 4 cups)
  • 1 large onion, diced (about 1 cup)
  • 1 can (10 3/4 ozs) campbell's® condensed golden mushroom soup
  • 1 can (14.5 ozs) diced tomatoes
  • 2 stalks celery, diced (about 1 cup)
  • 1/2 cup sliced pitted green olives
  • 2 Tbsps balsamic vinegar
  • 1 Tbsp tomato paste
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano leaves, crushed
  • 1/4 tsp crushed red pepper
