2 pounds yellow tomatoes, cut into quarters

1 jalapeno, seeded and chopped

1 big handful cilantro, tough stems removed

1/2 medium red onion, chopped

zest and juice of 1 lemon

1 medium cucumber, peeled and chopped

1/2 medium zucchini, peeled and chopped

1 tbsp extra virgin olive oil

salt and fresh ground black pepper to taste
