2 large yellow onions, diced

3 celery ribs, diced

1 tablespoon Madras curry powder

Pinch saffron threads

2 Granny Smith apples, peeled, cored and diced

1 1/2 teaspoons salt

1/2 teaspoon freshly ground white pepper

1/3 cup creme fraiche or heavy cream

1/3 cup plain nonfat yogurt

1/3 cup unsweetened coconut milk (Chaokoh brand preferred)

1 1/2 cups dry white wine

1 tablespoon Habanero Vinegar (see recipe)

3 pounds Prince Edward Island black mussels, scrubbed and debearded

2 tablespoons minced chives
