4 green onions

1 pound pork spareribs cut across the bone into 1- to 1 1/2-inch sections

Vegetable oil

1 tablespoon minced garlic

1/2 cup chicken broth

1/4 cup Shaoxing wine or dry Sherry (see Note)

3 half-dollar-size pieces of peeled ginger, slightly crushed

1 tablespoon oyster sauce

1/4 teaspoon granulated sugar, or to taste
