3 tablespoons extra-virgin olive oil, plus additional for garnish

4 ounces mushrooms, such as shiitake or cremini, thinly sliced

2 cloves garlic, finely chopped

Salt and freshly ground black pepper

10 eggs, lightly beaten and seasoned with 1/2 teaspoon salt
