Ingredients

2 crabs, live or cooked, about 1 3/4 pounds each

4 large tomatoes

2 pounds fresh green peas, shelled

1 teaspoon saffron threads, about 1 big pinch

1 cup boiling water

2 teaspoons mixed dried thyme, sage and rosemary

1/4 cup olive oil

2 onions, chopped

4 cloves garlic, minced

2 large, sweet red peppers, seeded and cut into 1/4-inch wide strips

3 1/2 cups Arborio or other short-grain rice (or substitute medium or long grain)

1 1/2-2 quarts chicken broth

1 pound cleaned squid, including tentacles, the bodies cut into rings

1/2 pound pancetta, cut into 1/2-inch cubes (or substitute ham)

1 pound chorizo sausage, cut into 1-inch pieces

1 pound firm white fish such as ling cod or halibut, cut into 1- inch pieces

1 1/2 pounds mussels, in the shell

1 1/2 pounds clams, in the shell
