4 chicken breast halves, boneless (we like leaving the skin on, but it's your choice)

1 lb. dry pasta (we used tricolor fusilli)

2 medium zucchini (1 large)

2 Cups chopped red ripe tomato (1 pint cherry tomatoes or 3 good sized regular tomatoes)

1 small red onion or 1 bunch green onions

1 Cup chopped olives ( we used kalamata)


2 TB. water

1/2 Cup olive oil, divided

1/4 Cup balsamic or red wine vinegar

1/2 Cup low-fat mayonnaise

2 tsp. honey

1 tsp. Dijon mustard

1 Cup feta cheese, crumbled (optional)
