Ingredients for 4 servings

2 cups couscous

3½ cups vegetable broth

½ cup dry roasted almonds, roughly chopped

2 tbs olive oil

1 brown onion, sliced into thin wedges

1 tsp fresh finely diced ginger

1 tsp turmeric

½ tsp cayenne pepper

1 cinnamon stick

3 carrots, roughly chopped

3 potatoes, thickly diced

600 g (20 oz) piece of pumpkin, skinned, seeded and thickly diced

2 cups chickpeas (tinned or cooked)

60 g (2oz) sultanas (raisins)

60 g (2oz) dried apricots, chopped in half

600 ml (20 fl oz) vegetable broth

1 tbs harrisa paste

1 tbs lemon juice

2 tbs fresh parsley, roughly chopped

2 tbs fresh coriander, roughly chopped
