3/4 cup all-purpose flour

3/4 cup packed dark-brown sugar

2 pints rum raisin ice cream, slightly softened

6 large eggs, separated; yolks into a large bowl, whites into a medium bowl

1 teaspoon ground ginger

Accompaniment: Bottled caramel sauce or topping, warmed (optional)

pinch of ground cloves

1/2 teaspoon baking powder

11/2 teaspoons ground cinnamon

Confectioners' sugar

1/4 cup brewed coffee, at room temperature
