  • The lamb:
  • 2 lbs boneless leg of lamb
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 Tbsps olive oil
  • 2 tsps paprika
  • 2 pita bread rounds, cut into 1-inch triangles
  • The vinaigrette:
  • 5 Tbsps olive oil
  • 2 Tbsps red wine vinegar or fresh lemon juice
  • 2 tsps dried mint leaves, crushed
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • The salad:
  • 1 red onion, chopped
  • 1 lb ripe tomatoes, cut into 1/2-inch cubes
  • 1 head butter lettuce, torn into bite-size pieces
  • 1 cucumber, peeled and cut into 1/4-inch-thick slices
  • 1 cup fresh Italian parsley leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup coarsely chopped fresh basil leaves
