The lamb:

2 pounds boneless leg of lamb

1 teaspoon salt

1 teaspoon freshly ground black pepper

2 tablespoons olive oil

2 teaspoons paprika

2 pita bread rounds, cut into 1-inch triangles

The vinaigrette:

5 tablespoons olive oil

2 tablespoons red wine vinegar or fresh lemon juice

2 teaspoons dried mint leaves, crushed

2 garlic cloves, minced

1/2 teaspoon salt

The salad:

1 red onion, chopped

1 pound ripe tomatoes, cut into 1/2-inch cubes

1 head butter lettuce, torn into bite-size pieces

1 cucumber, peeled and cut into 1/4-inch-thick slices

1 cup fresh Italian parsley leaves

1/2 cup fresh mint leaves

1/2 cup coarsely chopped fresh basil leaves
