Ingredients

Sweet Yeast Dough

1/2 cup warm water

1 tablespoon rapid-rise yeast

3/4 cup warm milk

3/4 cup sugar

3/4 teaspoon salt

1 egg

3 yolks

1/2 cup unsalted butter, melted

1/2 teaspoon pure lemon extract

2 1/2 teaspoons pure vanilla extract

1 teaspoon baking powder

4 1/2 to 5 cups all-purpose flour

Pineapple Filling

2 cups crushed pineapple, not drained

1 cup diced dried pineapple

2 cups yellow or dark raisins

1/2 cup sugar

1/2 cup orange juice, approximately

1 tablespoon fresh lemon juice

1 1/2 teaspoon cinnamon

1 tablespoon cornstarch mixed with 3 tablespoons water

1 cup walnuts, toasted and chopped

1/2 cup apricot or peach jam

Finishing Touches

Egg wash, 1 egg, pinch sugar
