5 x sweet onions, chopped finely (about 6 cups)

1 1/2 cup diced tomatoes

8 10 oz mushrooms, quartered

1 tsp salt

Black pepper, to taste

2 tbsp olive oil

1/2 cup low-sodium beef stock

1 tbsp cider or balsamic vinegar
