200 gm baby spinach

100 gm split red lentils

1 x banana shallot, finely chopped

1 clove garlic, finely chopped

1 x mild green chilli, finely chopped

1.25 litre light stock

1 tbsp cumin seeds, toasted and ground or the equivalent in ground cumin

3 tbsp Extra Virgin Olive Oil

1 tbsp Harissa

1 x Sunflower Oil

1 x salt and pepper to taste

1 squeeze fresh lemon

100 gm leftover good bread, cubed
