4 fresh red chiles, stemmed, seeded, and chopped

3 dried red chiles, stemmed and seeded

1 stalk of fresh lemongrass, hard outer layers removed, and white parts thinly sliced

2 garlic cloves, chopped

4 small shallots, half of them chopped, the other half thinly sliced
