1/4 cup + 2 tablespoons sugar + 2/3 cup granulated sugar

2/3 cup (5 large) egg whites, at room temperature

Ganache:

4 ounces white chocolate, finely chopped into matchstick-sized pieces

1/3 cup heavy cream

2/3 cup chopped peppermint stick candy (about 3 small to medium candy canes)

Filling & Frosting:

1 1/2 cups heavy cream

1/3 cup granulated sugar

1 teaspoon vanilla

8- to 10-ounce bar or block of white chocolate

1/2 cup chopped peppermint stick candy (about 2 small to medium candy canes)
