13 Ingredients

  • 3 Tbsps olive oil
  • 2 lbs portabello mushrooms, sliced into ¼ inch slices
  • ½ carrot, finely chopped
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup full-bodied red wine
  • 2 cups vegetable broth
  • 2 Tbsps tomato paste
  • 3-4 sprigs fresh thyme (or ½ tsp dried)
  • 1 Tbsp butter
  • 1 ½ Tbsps all purpose flour
  • 1 cup pearl onions, peeled and thawed if frozen (optional)
  • Egg noodles, cooked
