This was amazing! I changed a few things, I didn't have frozen spinach so I chopped fresh and sautéed it w garlic. I used goat cheese and I know I made more stuffing than it required but I think that's what made the dish!. I added fresh basil into the stuffing just bc I had some and needed to use it!. I also used the large tomatoes I had on hand and chopped them into small pieces and added artichoke hearts(bc they are my husbands favorite) I wrapped them into aluminum w some garlic and closed it up so it would steam up. Then poured it over the top of my chicken. I will be making this one again!

Ingredients

2 boneless, skinless chicken breasts

2 Tbsp light boursin cheese

3 Tbsp thawed and drained frozen spinach

1 Tbsp dried minced onion

1/4 tsp ground nutmeg

salt and pepper to taste

1/4 pint cherry or grape tomatoes, halved

2 Tbsp olive oil, divided

1 Tbsp balsamic vinegar
