30.0g butter

400.0g skinless cod fillet, cut into 4cm chunks (look for MSC certified cod from sustainable stocks or buy farmed)

500.0ml dry cider

142.0ml pot double cream

2 leeks , cut into rings

a good squeeze lemon juice

400.0g potatoes , peeled and cut into 4cm chunks

200.0g bacon lardons or streaky bacon , cut into strips

1 large bulb fennel , trimmed, quartered and cut into thin slices
