3 Russet potatoes

2 Eggs

1 c. Ricotta

1/2 c. Grated parmesan

1/3 c. Chives

2 c. Flour (making sure you have extra on hand for rolling them later)

6 T. Butter

6 T. Olive oil

Kosher salt & pepper
