Ingredients

2 quarts water

1 piece (3 x 4 inches) dashi kombu (see Note)

1/2 teaspoon salt

1/4 cup sesame seeds, toasted

1/4 cup Japanese soy sauce

1/4 cup mirin

1 teaspoon sesame oil

2 teaspoons fresh lemon juice or rice vinegar

Wasabi paste

1 pound very thinly sliced sirloin

8 fresh shiitake mushrooms, stems removed

1 pound Chinese cabbage, cut into thick shreds

1/2 pound watercress

4 ounces firm tofu, drained, cut into chunks

8 green onions, trimmed

Hot steamed white rice
