½ cooked potato , peeled and sliced

250.0ml passata

a small pinch cayenne pepper

½ onion , roughly chopped

1 finely chopped hard-boiled egg yolk

5 tbsp Cognac

3 garlic cloves , crushed

2 garlic cloves , crushed

2 egg yolks

1.0l fish stock

5 small red mullet , scaled and guttes, heads left on but eyes and gills removed

5 tbsp Pernod

¼ head celery , roughly chopped

2 pinches saffron strands

200.0ml olive oil

FOR THE ROUILLE

a small pinch saffron

croutons and Gruyère , grated to serve
