This was not light and fluffy like a frittata normally is. I never use flour in my frittatas so if I do it again I would use more egg and no flour. It was too heavy

Ingredients for 4 servings

butter, for greasing

2 tbsp cornmeal or polenta

2 cup small cauliflower florets (Romanescu or regular)

1 cup purple sprouting broccoli florets (1″ lengths”

1 tbsp butter

1 tbsp olive oil

1 large leek, sliced

5 large eggs

3/4 cup flour

1 tsp baking powder

1/4 tsp paprika

1/8 tsp turmeric

1/2 tsp sea salt

black pepper, to taste

3/4 cup grated cheddar

1/4 cup grated parmesan
