Ingredients

2 tablespoons olive oil

1 medium-size red onion, peeled, thinly sliced

Splash wine vinegar

Salt and pepper

12 slices focaccia, cut 3/8 inch thick (sun-dried tomato focaccia is particularly good)

1 1/2 cups herbed goat cheese (see recipe)

1/2 pound fresh mozzarella cheese, sliced

1 cup coarsely grated dry Monterey Jack cheese

6 oven-dried plum tomatoes (see recipe)
