I skipped the artichoke hearts. I also think that as a meal salad, the serving size is rather small. It was delicious. I will make it again!

I didn't use the artichoke but added avocado. You can really make this with whatever you have but I recommend using the sundrieds for a nice burst of flavour

Ingredients for 4 servings

½ cup brown rice, uncooked

½ cup coarsely chopped black olives

½ cup chopped artichoke hearts (about 4 hearts)

½ cup chopped cucumber

½ cup chopped spinach

½ cup crumbled feta cheese

¼ cup sundried tomatoes, in olive oil

1-2 tablespoons extra virgin olive oil

1-2 tablespoons fresh lemon juice

Salt & Pepper

Red pepper flakes (optional)
