600.0ml hot chicken stock

150.0g pack baby button mushrooms , finely chopped

2 celery sticks, finely chopped

2 thyme sprigs or lemon thyme sprigs, leaves removed and chopped

4 skin-on chicken breasts

FOR THE LEMON thyme RISOTTO

juice and zest ½ lemon

175.0ml white wine

25.0g dried porcini mushrooms, soaked in 250ml water for 30 mins, soaking liquid reserved

Ingredients FOR THE chicken & stuffing

50.0g parmesan , grated, plus 1 tbsp extra to serve

1 onion , finely chopped

1 small onion , finely chopped

140.0g risotto rice

1 tbsp olive oil

1 tbsp butter
