12 Ingredients

  • 2 lbs chicken tenderloins, each one cut into thirds
  • Salt and freshly ground black pepper
  • 1 cup flour
  • 2 eggs, lightly beaten
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 5-6 cloves garlic, finely chopped or grated
  • Few grates lemon zest
  • 1/4 cup (a small handful) parsley, chopped
  • 3 Tbsps extra-virgin olive oil (EVOO)
  • 1 15-oz can crushed tomatoes
  • 1/2 cup store-bought pesto
