1/2 cup kosher salt

2 tablespoons whole mustard seeds

1 bunch cilantro, chopped roughly

2 tablespoons black peppercorns

2 large Yukon gold potatoes, cut julienne with the skin on

Salt and pepper, to taste

1 large onion, cut julienne

2 quarts cold water

4 cloves garlic, minced

2 tablespoons Szechuan peppercorns

1/4 cup sambal chile paste

1/2 cup sugar

1 teaspoon black pepper

2 anaheim chiles, seeded and chopped
