3 red beets (and/or golden beets)

2 tablespoons canola oil

1 tablespoon salt

1 teaspoon black pepper, freshly ground

1 (15-ounce) can black beans, drained and rinsed

2 cups sugar plum tomatoes, halved

1 cup broccoli florets and stems

10 ounces sugar snap peas

3 tablespoons white wine vinegar

1 clove pickled garlic, finely minced

1 tablespoon honey Dijon mustard

1/3 cup grapeseed oil

4 tablespoons honey

2 tablespoons parsley leaves, finely chopped
