1 cup diced dried apricots

1 cup water

4 Tbs. (1/2 stick) unsalted butter

1 yellow onion, chopped

1 Tbs. minced fresh rosemary

2 tsp. minced fresh sage

8 cups crumbled dried corn bread (see related recipe at left)

1/4 cup chopped fresh flat-leaf parsley

Salt and freshly ground pepper, to taste

2 cups turkey or chicken stock, warmed
