Two 1 1/2-pound live lobsters

1 pound dried rice vermicelli

1 large stalk fresh lemongrass, tender bulb only, minced

2 tablespoons sugar

1 tablespoon Asian shrimp paste or anchovy paste

1 tablespoon chili paste

3 tablespoons peanut oil

1/2 pound medium shrimp, shelled and deveined

2 tablespoons minced fresh ginger

1/4 cup fresh lime juice

1/4 cup fresh lemon juice

1 tablespoon fish sauce

6 large scallions, chopped

1 large egg, beaten with 2 tablespoons of water

3 tablespoons chopped cilantro

1 cup (4 ounces) dry-roasted peanuts, coarsely ground

2 cups bean sprouts

Lime wedges, for serving
