pinch of coarse sea salt

1/2 cup plus 1Tbsp superfine (baker’s) white sugar (not powdered sugar)

1/4 cup confectioners (powdered) sugar

1/3 cup unsweetened cocoa powder

1 1/2 cup heavy cream

9 oz dark chocolate, chopped

1 2/3 cup mascarpone

pinch of nutmeg

2 tbsp Cointreau or Grand Marnier or other orange liqueur

1/2 cup mascarpone cheese

2 tbsp confectioners (powdered) sugar

1 cup heavy cream

Fresh fruit or berries, rinsed gently and sliced if necessary

Confectioners (powdered) sugar for dusting
