1 x small onion, coarsely chopped

2 ribs celery, sliced into large chunks

2 x carrots, sliced inot large chunks

1 tbsp fresh thyme leaves, chopped

pinch of red pepper flakes

Kosher salt and freshly ground black pepper, to taste

3 cloves garlic, finely chopped

1 cup beef Stock

1/4 ounce dried Porcini mushrooms

1 can whole San Marzano tomatoes

1 cup leftover braised short rib meat, stripped from the bones and shredded slightly

1/2 cup milk

1 pound pappardelle

parmesan cheese

1/4 cup flat leaf parsley, chopped
