3/4 cup lukewarm water

2 envelopes (1/2 ounce total) active dry yeast

1/4 cup sugar

4 cups flour, plus 2 tablespoons more if necessary

2 large eggs

2 egg yolks

7 tablespoons unsalted butter, at room temperature

2 tablespoons brandy

2 teaspoons salt

5 cups vegetable oil, for deep-frying

1/4 cup apricot or strawberry preserves

Sifted confectioners' sugar, for sprinkling
