2 ripe, firm pears such as Comice, Butter or Bartlett

3 tablespoons cold unsalted butter

2 cups Viognier or other fruity, unoaked white wine

1/8 teaspoon vanilla, or 1/4 vanilla bean, scraped

1/4 teaspoon honey, or to taste

2 tablespoons currants

2 teaspoons heavy cream

Kosher salt to taste

6 tablespoons fromage blanc or ricotta

1/4 cup blanched sliced almonds, toasted

Powdered sugar (optional)

6 (6-inch) sweet crepes (see linked recipe)
