2 ounces dried bean thread noodles (see Note)

3 to 4 dried shiitakes (see Note)

2 large green onions

2 teaspoons canola oil

1/4 to 1/2 teaspoon minced garlic

1/4 to 1/2 teaspoon minced ginger

2 1/2 cups poaching broth or low-sodium chicken broth + more as needed

1 large lime, zested and juiced (about 2 tablespoons juice)

1 tablespoon seasoned rice vinegar (or 2 teaspoons rice vinegar and 1 teaspoons mirin)

1 tablespoon tamari

1/8 teaspoon Asian-style toasted sesame oil

1 cup thinly sliced napa cabbage

2 medium carrots thinly shredded Asian-style or cut into fine julienne, about 3/4 cup

6 to 8 ounces poached chicken thigh, shredded or chopped

Kosher salt to taste

6 to 8 large mint leaves, or to taste

Chopped cilantro, about 1 tablespoon (optional)

Toasted sesame seeds (optional garnish)
